‘Kates Cornish Christmas Cake’ Tis Proper Ansum!

Have you made your Christmas cake yet? If not, why not try this quick, easy and delicious cake – supplied by reader, Kate Phillips from Cornwall.


Christmas Cake MixIn a very large saucepan put :-
12 3/4 oz chopped prunes
8 3/4 oz raisins
4 1/2 oz currants
6 1/4 oz unsalted butter
6 1/4 oz dark soft brown sugar
6 1/4 oz runny honey
3 1/2 fl oz dark rum
zest and juice of 2 oranges
1 tsp mixed spice
Simmer for 10 mins and leave to cool for 30 mins……sample some of the rum whilst waiting !
Then to this mixture add :-
3 eggs
5 1/4 oz plain flour
2 1/2 oz ground almonds
1/2 tsp baking powder, 1/2 tsp bicarb
Gently fold in, pour into 8 inch cake tin, lined and greased. BAKE!
150 deg c for 1 1/2 hrs
